Pure Oil obtained from the "Tonda Iblea" olive groves situated between 600 and 700 metres asl in the area of Buccheri, the highest point in the Iblei Mountains.  The harvest is carried out exclusively by hand from the end of October to the end of November. The pressing takes place the same day at a low temperature and under constant control.
